Danksgiving Feast 2015: A ‘Greener’ Green Bean Casserole


No side says Thanksgiving – or rather, Danksgiving – quite like a Green Bean Casserole.  We took that recipe and we made it just a little bit greener.


3 tablespoons cannabutter

2 (12 ounce) packages of frozen green beans

8 ounces of mushrooms (quartered)

1 small onion (thinly sliced)

1 tablespoon parsley

2 tablespoons flour

1/2 teaspoon of lemon zest

1/2 teaspoon salt

1 pinch ground pepper

1/2 cup of milk

1 cup sour cream

1/2 shredded cheddar cheese

1 can french fried onions


Step 1: Preheat oven to 375°F and place green beans into saucepan with 1/2 inch of water. Bring to boil and steam until tender (about 5 minutes). Drain and toss with mushrooms then set aside.

Step 2: Melt the cannabutter in skillet over medium heat and add the onion and parsley. Stir and cook until onion is tender. Whisk in flour and then add the lemon zest, salt, and pepper and mix. Gradually whisk in milk while continuing to stir so that no lumps form. Then stir in sour cream.

Step 3: Heat until the sauce begins to bubble. Add the green beans and mushrooms, stirring to coat.

Step 4: Remove from the heat and mix with some of the Cheddar cheese and French fried onions. Save some of the cheese and french fried onions to sprinkle on the top.

Step 5: Put into a 1 1/2 quart casserole dish and top with the reserved onions and cheese. Bake in the preheated oven until the cheese melts, about 15 minutes.
